On The Menu 2nd Week Of March
Looking for mealtime inspiration? This On The Menu for the second week of March is filled with 45 easy and delicious recipes for your family to enjoy.
This meal plan has you covered with plenty of mix-and-match options: main dishes, side dishes, vegetables, salads, desserts, and breads, along with plenty of early spring recipes perfect for the season.
Whether you are craving a cozy comfort meal or something fresh and seasonal, this week’s menu will make dinnertime effortless and delicious. Let’s get cooking.
You probably know by now that I love my air fryer. It makes food so crispy and delicious and was one of the best kitchen investments I’ve ever made. The best part? It didn’t cost much at all.
I use it several times a week and have even started making breakfast in it—air-fried two-ingredient bagels, breakfast pizza, and donuts are some of my favorites. Now is the perfect time to jump in if you haven’t tried cooking with an air fryer yet.
I grew up eating salmon cakes, but these Air Fryer Salmon Cakes are not my mother’s version. Hers were good, but these are next-level. I added a few extra ingredients that take the flavor up a notch. They are crispy on the outside, tender on the inside, and absolutely delicious. Don’t skip the homemade tartar sauce—it’s simple to make and so worth it.
No air fryer? No problem. You can sauté these in a pan or bake them in the oven, and they’ll still turn out great.

I have a big love for Mexican food. As I write this, a pan of enchiladas is baking in the oven for dinner. Enchiladas are a favorite, and so are fajitas. Tonight’s dinner on the blog is a delicious mash-up of fajitas and a quesadilla. Doesn’t that sound fantastic?
Mary from Barefeet In The Kitchen cooks her fajita vegetables in a pan on the stovetop, but if the weather cooperates, I’ll have Bobby fire up the grill. Thanks for the inspiration, Mary!
This main dish is served with refried beans, a must-have in our home when Mexican food is on the menu. I often make authentic refried beans from dried beans—it’s surprisingly easy—but when I’m short on time, I doctor up a can for a quick and delicious shortcut. A Mexican-inspired meal always feels like a celebration, and the “refrieds” are always invited.
If you’re making refried beans, be sure to try the blender salsa, too. It’s made with fire-roasted canned tomatoes, and the flavor is incredible.

Tonight’s dinner is so fresh and has some of the best Italian flavors! If you are a fan of Caprese salad, you will love this main dish spin on it. Bobby will grill the chicken. He loves his grill and is happy to grill unless we have torrential rain sideways.
Caprese chicken will look beautiful on a mound of tonight’s featured side dish. I am so excited to make this recipe. It has some of my favorite words in it… Greek, spaghetti, and garlicky. Do you remember spaghetti pasta salads? I kind of forgot about it. Danielle and Cameron, I’m so glad I found your recipe on Pinterest.

I’ve made this scrumptious Cod Piccata from Iryna from Lavender and Macaroons quite a few times. It is that good! It is perfect for a weeknight and also company-worthy! This recipe begs to be made over and over! Thanks, Iryna.
I’m pairing this recipe with delicious Greek orzo, which complements the flavors in the main dish. I’m also serving creamy cucumber salad for a fresh element for tonight’s dinner.

It’s pizza night. Instead of making a traditional pizza, I’m going to serve the grownups something a bit different and delicious. We will heat up a couple of frozen pizzas for the kids.
Thanks, Beth from Budget Bytes, for this delicious flatbread recipe! The flavor profile could not be tastier! Caramelized onions, artichokes, and Feta cheese! If you don’t have time to make the flatbread (but I suggest you do), you can use Lavash bread as the base for this recipe!

Chicken Parmesan is one of Bobby’s favorite meals. I’m making this recipe even yummier by using my air fryer tonight. When we get Italian take-out, Bobby always orders Chicken Parmesan. No take-out tonight, Bobby! Let’s make Chicken Parmesan at home!

Have you ever had Chimichurri sauce? If you haven’t, you must give it a try! It kicks up the flavor of vegetables, meats, and even fish! Spring and summer are not spring and summer without homemade chimichurri sauce!
We are grilling flat steak and slathering it with this herby sauce. It is just so good!

One of my favorite sweet treat desserts is also very easy to make. A galette is a pie without all the fuss! I’m making a strawberry rhubarb galette. YUM! I’ll be substituting half of the rhubarb in my rhubarb galette with strawberries for a really delicious spring flavor.
This recipe is so versatile. Most fruits can be substituted with great success.
I like to serve a galette with custard sauce or vanilla ice cream. Both are delicious.

Yay! I’m so glad you are inspired.
Thank you for always sharing your menu with us, and I loved that you moved it to Fridays. You always inspire me to try new things, but I also love that you do things like dressy hot dogs. You are such an inspiration in so many ways!
Wow, thank you Jilly!
I loved the Copycat Maggiano’s Chopped Salad and it was dinner tonight. Thank you for sharing your menu options as I look forward to it each week
You are welcome Judy. I like anything from Maggiano’s especially their “eat one and take one home”. YUM!
Thank you for sharing your recipes. Several I will be trying soon. I just got an air fryer and am looking forward to
using it more. And I love a good home made hot dog also.
Blessings,
/va
I too am so inspired by your menu choices each week!! Can you give any tips for cleaning an air fryer? Mine seems to have built up some sort of film I can’t get off.
Thank you so very much for the delicious recipes! I have a decorating question. I purchased a dark grey sectional, had it customed made, I always had off white and went dark this time. Bad mistake. What color pillows can I accesorize with?
Brighten it up with textural light neutral pillows. Use one pillow that has warm tones to make the dark gray look more warm. Hope this helps.
Some of these recipes are wonderful. I’ll try them this weekend. Thanks for sharing!
So glad you are enjoying On The Menu
Thank you for bringing back the weekly menu ideas!
