Monday- Slow Cooker Soup Day
Soup! What a great way to start a week! Right now, I have a WW zero-point Chicken Soup in the frig for lunches, and wow, is it good!
I’m going to start creating and posting my favorite recipes so you can enjoy them too. So look for this great filling soup soon.
Today I can’t wait to make Slow Cooker Mexican Street Corn Chicken Soup. I get almost giddy about soup! I bet my whole house will smell scrumptious!

Tuesday
I’ve been making roasted chicken for decades, and it’s just so good and easy! We eat and use every single bit of the chicken. We will have it for dinner tonight and leftovers for the week, and I’ll use the carcass to make stock.
If you make one thing this week, it should be a perfectly roast chicken! Oh, YUM!
Wednesday
Do you love Fish Tacos? If you do, you will really love these fresh-flavored bites of taco joy! LOL! I know I get a little over the moon when it comes to a really delicious recipe.
I make these in honor of my Mom. She is a big fan of Fish Tacos!
I’m tweaking my recipe a bit to make it more healthy. I’ll coat the fish with panko breadcrumbs and use the air fryer. Yes, air fryer again! Seriously, this air fryer has changed the way I cook! So much healthier! See my AIR FRYER HERE.
Let’s be honest, though! The original way to prepare the fish in the recipe is my favorite!
And there is really nothing that compares to a battered fish! Who doesn’t love batter fried fish, right?
So, once in a while, I make the fish with batter and fry it. But not tonight!
Thursday
Chicken fingers are not just for kids. Kids and grown-ups will love chicken fingers like the ones from Averie Cooks.
I’ll make a double batch and add them to salads for lunch! Yummy!
Friday- Weekend Company
Do you have a meal that you can make almost in your sleep? One that is a no-fail and so amazingly good? You should have a few of these recipes. Grandma Lo Bianco’s famous meatballs is one of my favorite, no-brainer recipes!
We are having company for the weekend, and I want to feed them well and enjoy them. So I’ll make these yummy make-ahead meatballs and a chopped salad, and dinner is guaranteed to be oh-so-good!

I made this glorious chicken dish from EATWELL 101 for company a few months ago, and I am so hooked! If you are coming for dinner the first time at our home, you will probably get this for dinner. LOL! Everyone raves!

You really need to give French Onion Chicken a try!
I’ll make the onions ahead this week so they will be ready for this easy company-worthy recipe! And I’m thinking about adding a slice of ham under the chicken for a little depth of flavor! Doesn’t that sound wonderful?

Sweet Treats Of The Week
Our guests will be treated to a couple sweet treats.
First, this beautiful chocolate cake! And I’m whipping up a couple batches of my favorite BARELY BAKED CHOCOLATE CHIP COOKIES

I’ve been on the fence about getting an air fryer, but your recipe ideas have me seriously considering getting one. One question I have is which size to get? It’s just me and my husband at home but we often have kids and grandkids here for dinner. Well, pre-Covid anyway. I also like to make enough for planned leftovers as we run a business and I work part-time. Any thoughts on what quart size might be a good choice? Thank you!

Oh my goodness, Yvonne. Please disregard my last question about sweet pepper spice. I thought I saw Tbsp after it on the chili ingredients. Sweet peppers are red bell peppers here in Canada. Sorry about my confusion. I’ve got my shopping list ready for the store now to try your chili recipe. Comfort food at its best on a cold Winter day.
