This week’s menu and recipes are full of warming and hearty flavors! I must admit I’m very anxious for the fresh flavors of spring and look forward to them. But while snow is on the ground, I’m making lots of soups, stews, and oven meals. And my slow cooker is getting a workout this week! Let’s eat good food!

MONDAY- SLOW COOKER DAY
Pork and sauerkraut is a religion in Lancaster Co. It’s one of Bobby’s favorite meals. And it is so easy! I make enough for leftovers, we’ll eat for lunch. And if you really want the whole Lancaster Co. meal, make the applesauce. We all love it. What a difference,
So I make pork and sauerkraut in the slow cooker so the pork (shoulder) has time to literally fall apart. This so-yummy recipe from Mira at Cooking LSL is very close to mine!

Tonight’s main dish is such a beautiful-looking recipe from one of my favorite foodie blogs, The Recipe Critic!

WEDNESDAY- FAMILY DINNER
I’ve made this scrumptious salmon recipe from Cooking Make Healthy a few times, and we just love it!
It’s good to have salmon on the menu every week. It can take on many flavor profiles. The honey and soy in this recipe make it sweet and savory! The salmon will taste amazing with the hassle back potatoes done in the air fryer. The can also be done in the oven. You should consider getting one if you don’t have an air fryer!

THURSDAY- SLOW COOKER SOUP
I’m making the most wonderful and easy soup tonight! And it’s so easy! We enjoyed it so much last week that I’m making another slow cooker full of it again. I’m trying to make more soup for dinner because we love to eat it for lunch,
Chicken Taco Soup is a beautiful, delicious, and flavorful soup that is so family-friendly and filling!
Just dump all the ingredients in your slow cooker and let it cook on low for 6 hours. YUM!
I LOVE to make my own crispy tortilla chips to top the soup. Can you guess what I made them in? The air fryer! It’s easy and really crunchy!

Crescent rolls have some kind of magical hold on me! It must be from my childhood. We had crescent rolls for special occasions like Christmas and Easter! I love bread, and those refrigerator-section crescent rolls are my favorite! Did any of you eat then as a child?
We are having our Son’s family over for dinner and a movie. My six-year-old granddaughter will spend the weekend. She showed up with her overnight bag and asked to spend the night. How could I ever say no? She is a joy!

SATURDAY- SOUP DAY #2
This soup will be a favorite of my Bobby’s! He loves anything Italian. I’m making this for him to take to work next week! YUM! This is a bit of a cheater soup. To help make the broth, I use a can of jarred spaghetti sauce. It’s really like eating a meal! I think you will love it.

My young formative years were spent growing up in Scotland and England. And I came to love fried fish and chips wrapped in newspaper. But I never got on board with the malt vinegar. You can take the girl out of America, but you cannot take the tartar sauce out of the girl!
We are having very good friends for dinner, and I know they will love this easy and fun meal.

The pork and sauerkraut is confusing. It looks so good but am I to use bottle kraut or chopped cabbage? Thanks.
Hi Mary, Mira is talking about bottled or bagged sauerkraut. She was just commenting that she chops it up finely. Just dump it right out of the bottle or bag right into the slow cooker. Hope this helps.

Yes, I often use frozen salmon. Take it out of the freezer, put them on a tray in your refrigerator and let them thaw. When I forget to do that I also put the salmon in a zip type plastic bag and then put them in a big bowl in the sink and drizzle warm water over them. Then when they are defrosted enough to pull apart put them in the warm water for a little bit.
I don’t always cook something from your list but it’s my favorite section on your blog!!! The chicken dish and the soup look delicious.
