On The Menu: 1st Week Of February
Don’t you love doable dinner menus? This week let’s talk about dinner recipes using things you mostly have stocked in your pantry and frig and freezer! Super easy dinners that taste good and are satisfying!
Eat well this week! And take good care of yourself!
MONDAY- PASTA DAY
This is one of my favorite easy dinners to make. Since I keep bacon (or pancetta) in the freezer, this pasta dish is one I can make with few ingredients. If you have never made pasta carbonara, you will want to give this a try! The secret is stirring the eggs in furiously!
If you don’t have bacon, you can make it without it!
TUESDAY
As you probably know, I grew up eating salmon patties and love them! My mom used canned salmon, and her salmon cakes were really scrumptious! So, if you can’t get fresh salmon, use canned! And I’ll be using roasted red peppers in a jar instead of fresh peppers because I’m using what I have on hand. If you don’t have breadcrumbs, you can make them if you have bread!

WEDNESDAY
Chili is so versatile! Again, I use what I have on hand. If you can’t find hamburgers, use ground turkey. If you don’t have turkey, how about ground sausage? No meat? No worry! Add an extra can of beans and add rice.
If you don’t have chili seasonings, use a canned chili or a small palmful of chili, about the same as cumin. No salsa, don’t worry! Add tomato sauce, diced or canned tomatoes, and a little ketchup!
You can substitute so many things when it comes to chili!
THURSDAY
So many of the recipes this week are a real blast from my past. My mom made easy dinners that fed a large family! And many ingredients came out of a can!
I have a couple cans of tuna in my pantry and was looking for a tuna noodle casserole and came across this more grown-up version from Six Dollar Family. This is an amazing frugal-lovin’ site!
Our small local farmers’ market offers hydroponic greens. So I’ll get there early in the week and grab a head or three of gorgeous lettuce.
- GROWN-UP TUNA NOODLE CASSEROLE

FRIDAY- EASY SOUP DAY
Soup is a good way to use frozen broccoli. I have a big bag in the freezer, and this soup will be easy to make with just a few ingredients. Instead of heavy cream, I’ll use evaporated milk and whole milk. Thanks to Monica at Food Recipe.
Beer bread is a family favorite! I’ve been making this for years; it is delicious and filling! If you are finding it hard to find bread, make beer bread! No beer? Use soda!
SATURDAY
It’s a rare menu plan that does not have chicken on it! But no chicken this week. (However, there are a few below in OTHER YUMMY RECIPES)

SUNDAY- BREAKFAST FOR DINNER
My husband loves breakfast for dinner. No wonder! Breakfast is his favorite meal of the day! So, honey, this is for you!!!!

- BREAKFAST SAUSAGE
- FRUIT
TREAT OF THE WEEK
These chocolate chip cookies are crunchy on the outside, gooey on the inside, and just the best you will ever eat! If you make one thing this week, these cookies should be it!
