I love soup because making it is not rocket science! You can make the soups according to the recipe or off-road a bit and add something you like or take out what you don’t! These delicious soups make enough to feed a family and still have leftovers for lunch the next day! Yum! Let’s make soup!

Roasted Butternut Squash Soup With Sausage And Sage

ROASTED BUTTERNUT SOUP

Butternut squash is one of my favorite fall vegetables. It has a mild buttery pumpkin flavor that is so pleasing. When these flavors are combined with sausage and sage, something even more delicious happens! This soup tastes like fall in a bowl.

In this recipe, I show you the best way to cut up a butternut squash and chop it. The soup recipe calls for sage sausage and an apple for extra sweetness. Yum! Use homemade chicken broth or a good store-bought version. You can substitute the milk or coconut milk for another tasty spin on this recipe.

Roasted Butternut Squash soup can be made in a Dutch oven or slow cooker.

If you don’t want to add sausage, you can garnish the top of this soup with cooked bacon and a dollop of sour cream or créme fraîche.

Not only is this soup filled with healthy ingredients like beans, corn, fire-roasted tomatoes, onion, and peppers, it is super easy to make. The beauty of this soup is that you can add other ingredients like jalapeno peppers if you like it a bit more spicy or other veggies as well.

I like to top this soup with cheddar cheese, sour cream, and thinly sliced green onions. When tortilla strips are added, this soup can also be called Chicken Tortilla Soup. When I have time, I like to make tortilla chips in my air fryer.

This soup is gluten-free. Just make sure to check that you use gluten-free chicken broth and use corn chips as a garnish. Make this soup vegan-friendly by substituting the chicken stock for vegetable stock and chicken for tofu. Another fun substitution is to change out the cheddar cheese for another dairy product like queso fresco.

This is Bobby’s favorite soup because it has pasta in it! You can also swap out the tortellini and add gnocchi, and swap out the sausage for cooked diced chicken breasts to make Chicken Gnocchi Soup. And if spinach is not your favorite, substitute Swiss chard or kale. There are lots of variations to this delicious soup. Ham and Bean soup was my Daddy’s favorite. But not this scrumptious kind. He liked it out of the Campbel’s can! Actually, I did, too, growing up.

When I moved to Lancaster County, I fell in love with one of the staples of our area, Ham and Bean Soup, made with a bag of 16 Bean Mix. The bean mix even has split peas in it, and I loathe peas! But in this soup, split peas taste like lentils to me. Along with the beans, I like to add a couple (or more) of smoked ham hocks to the soup. This delicious protein is what gives this soup its rich, smokey flavor.

I think this Ham And Bean soup is classic comfort food! Again, a soup from my past, but actually much better! Hearty Ham And Bean Soup is great for game days or any other fall day, too! Serve it with Butter Topped Beer Bread.

Potato soup is another blast from the past! My grandmother made a less loaded version. This soup has everything you would want in a loaded baked potato. Potatoes, bacon, sour cream, onions, cheddar cheese, and just enough grated carrots to add a hint of sweetness.

Loaded Potato Soup soup is company-worthy! It would be a hit on a soup bar or potluck. And, of course, on game day!

Add a little more of this (like the bacon) or a little less of that! Add a French Onion Soup Mix package to give this soup an interesting and complex flavor profile. Or make a healthier version by using sweet potatoes instead of white potatoes. Sautee leeks and add them to the base of this soup to make Potato Leek Soup.
