Creamy Bacon Ranch Pasta Salad

Bacon Ranch Pasta Salad is a creamy pasta salad has a distinct and popular ranch dressing flavor. This delicious side dish also boasts a smoky flavor from the crunch of bacon. Serve at a potluck, barbecue, or even for a weeknight dinner.

Ingredients

  • 1 16-oz small or medium size pasta
  • 1 1-oz packet of dry ranch dressing
  • 1/3 cup mayonnaise
  • 1 16-oz sour cream
  • 2 TB fresh parsley finely chopped
  • 1 TBS fresh dill finely chopped
  • 1 medium shallot finely chopped
  • 12 slices cooked bacon crumbled
  • 16 oz sharp cheddar cheese grated
  • 1 medium grated carrot optional
  • 1 10-oz bag frozen peas thawed
  • salt and pepper to taste

Instructions

  • Bring a pot large pot of water to boil. Lightly salt and cook pasta according to the package directions. Drain and rinse with cold water. Put the pasta into a large bowl and set it aside until completely cooled.
  • In another bowl, add the mayonnaise, sour cream, dry ranch dressing mix, parsley, dill, and the shallot. Mix to combine.
  • Mix the ranch dressing mixture into the pasta. Stir to completely coat.
  • Add the crumbled bacon, cheese, carrot, and peas to the pasta and gently combine.
  • Add salt and pepper if needed and combine.
  • Cover for at least one hour so the flavors can marry.
  • Add any garnish and serve.
